Chik Patties and SO Much More

So...I am currently watching "Lie to Me" and waiting for "Glee" to transfer from our other room so I can watch it.  I am also currently avoidung the three projects I need to finish so I can be done with my school semester.  However, I was just so excited to have time to blog again.....I couldn't help but procrastinate a little!

Fall is my favorite season, it includes all the best things, cool air, colorful trees, Thanksgiving....and of course my Birthday!   As it is only a week away I felt I needed to share that one more time with you! 

While I am sharing I had a great food day!  I started with a Soy Latte and moved on to berries and a salmon sushi roll and completed the day with a Morning Star "Chik" patty and half a cup of red quinoa.  One, I am totally content...yea....and two, I totally LOVE quinoa.  It's a touch nutty and the texture is like rice and it is like WAYYYYY loaded with good stuff!  Fiber, portein....yum!

Okay, changing topic again...I have been wanting to tell stories from my classroom forever so...Hot Mess presents: Super Crazy Hot Mess English Adventures!!!!!

I know you missed me!

Hello friends!  I have finally managed to climb out from under 45 research papers, 18 weeks worth of lesson planning, 4 class projects of my own...oh...and the rest of my life...to finally be at a point where I can chat with you again!   Boy am I exhausted!!!!

First thing, and of course the most important, I will be turning 28 in 10 days!   Woo!  I am actually excited about this year as opposed to last year, so I have made improvement!!

I have been reading a new blog, it is called "Happy, Healthy Life" and Kathy, the author, is a very amazing woman.  One, she is Vegan...that takes will power i just don't have.....I NEED, not want or like, NEED cheese in my world.  Two, she is so educated about how to eat and cook, its just amazing!   I am officially re-inspired and have decided I am going to head towards the vegetarian path.  I will not do this all at once, that's like telling an addict they are cut off cold turkey, but I am officially only on fish and white meat.  I hope to cut down to meat only 2 days a week.   This means I am going to have to find more veggies I like and remember there is no extra carbing allowed!  

I am telling you this because I just know that i will see some of you throughout the week and you will hold me accountable....because you are all good friends who want me to be a consistant person!

Sad to say that is all I have time to blog now...but never fear....I WILL be back tomorrow!

Thought....

Maybe I have blogged about this before...maybe not...but 8 years ago yesterday we lost our sweet Pastor in a car accident and had to watch his family adjust to life as it would be from then on...yesterday at church the pastor said something that made me think, "How appropriate for today, Lord."

He said, "Jesus got hit by the truck to we would only get hit by the shadow."  I don't know what it was about the statement but it got me thinking about our sweet pastor and all he did for his family and church and everyone that was left behind.

The list could go on all day but those are the big ones.  He was a man like I will probably never know again.

Where does the time go anyway?

I am SOOO sorry all my lovely internet friends for not writing for so long!  I have been in the maddening world of limbo and stress and AHHHHHH!!!!!!!!!!!!!!!

Here are all the things that have been happening!

1.  I got to give my two weeks notice at my job!  Halleluiah!!
2.  Got my teaching contract, 11/12th grade OFFICIALLY!!!!   YES!
3. Slowly but surely getting our stuff back plus some super fun treats, see the following:

It will sit the opposite way in our house and it's cocoa (aka brown!)

New Coffee table so it will fit (plus our old ones are looking rough)

Tip it on its side and the TV will be on the wall above it


I will take a picture when everything has arrived and is nicely in place!  I am so excited.  We have been married 5 years on August 6th and had the same furniture since before we got married (well, I had it) so my patience (and a broken window) is paying off!!!!!  And this is JUST the beginning, I have more budget I am hoping to get an accent chair and a giant mirror to lean against the wall.  We will have a whole new house!  This is what PATIENCE (which is hard for me) will get a person!!! 

Along with all of this I have convinced (wink) the First Lady to teach me all her wonderful art techniques and in the process my evil ploy to get another piece of art came to fruition:

No Frills Attached

Hello again and wow, sorry its been so long!  That is very rude of me....although it was also very rude of someone to break into my house and cause the mess that has kept me busy and without a bloggy thought! 

I am very proud of myself.  Last night we went to Hi Tone to see my friend Brooke Waggoner play (yes I have mentioned her before) and she didn't even START playing until 11:15....that's past my bedtime....and I stayed up until 2 AM!!!!  What?!?!?!  Really this is unheard of!  I also haven't hit the "I'm exhausted" wall yet!  I think this says a lot:

1) I can in fact function on less than 5 hours of sleep.
2) I have no excuse to be lazy and not get up in the morning to work when I know I can function on less than 5 hours of sleep.
3) And my hubby's dream come true:  I have to suck it up and enjoy it when we are out with friends at night and not worry over how late it is.

Only took me until age 27 and some months to figure it out folks!

Very excited about the end of the week.  Meatloaf night with the Lynches aka Jack and Nellie date night.  Room painting tomorrow before we have both TV's back and then hopefully a weekend of purchasing new things to replace stolen ones, and QUIET.  Then church and book club Dorian Gray style on Sunday! 

I love my life friends.  Love it.  So thankful for everyday I have to live it!!!!!

Run away, run away!!!

So the Hubbers and I went on a semi-impromptu trip to Dallas to retrieve a schnauzer named Kuper (yes, I did spell correctly, his mama is a HUGE KU fan.....shhhh don't tell...that is very uncool here...also the do is a story for another day)  While we were there we got to spend time with my sister in law, Amber, and her hubby Michael and their herd of children, Brennan 9, Evelyn 8, Jackson (my heart) 4, and NoNo (Nolan)1. 

We went to Hawaiian Falls water park the first day.  It went something like this....Mushroom pool (there are mushrooms that shoot water), lazy river, random slide, kiddie pool, lazy river, lazy river and more Mushroom pool.  The highlight of the day was my little Jackson man attaching himself to my toes as we floated around the lazy river.  He is so funny! 

The next day we took the big kids to Six Flags Over Texas...yes it is actually OVER Texas...who knew?  We rode 6 roller coasters, 3 of which we rode, I would say, 5 plus times!!!   My favorites were Batman and Titan.  I am pretty sure almost every Six Flags has the Batman coaster.  It's one of the ones where you get to dangle your feet and it flips and cork screws every so often.  The Titan was by far my favorite though.  It takes you up 45 stories and the drop over the other side is so steep it has to go UNDERGROUND!!!!   Wow, it was intense!  I think my least favorite was Tony Hawk's Big Spin.  It is a little coaster and the cars sit four people and they spin depending on the weight of the people in them and how you sit...it was odd...I was not a fan.

So with all that fun we headed home, new temporary dog in tow, only to find our house had been broken into.  I was going to take pictures because I don't think my words really describe how awful it was but it made me sad so I decided to skip on that.  Our HD tv's were stolen all of our gaming systems, games, controllers, and other various things.  What really broke my heart is what I found that they stole while I was cleaning last night....my wedding band. 

You see, I have 2.  I have the one that my husband put on my finger on our wedding day and the one I wear now.  Ring #1 is a simple white gold band nothing special but it was all we could afford.  Band #2 is a 1/2 carat diamond band that Trey wanted to give me the first time when we couldn't afford it.  All that is to say I kept band #1 because it was sentimental and always reminds me of how we started our marriage...sorta poor but very in love.  AND THOSE JERKS TOOK MY RING!!!!!!!!!!!!

On the plus side of "the break in"  I now have time (with no television to distract me) to touch up all the spots on the wall that need painting in our room and there is no TV obstruction in my way.  I also have time to completely reorganize my closet and dresser, they nicely took everything out of both of these places for me...so I figure they helped me get started.

They also left giant shoe scuffs on my wall where they climbed in and out the window, so I am currently debating if now might be the time to go ahead and paint that bathroom.  We can't use the shower for a week because we re-grouted part of the floor so it won't be humid and the paint can dry....why not change while we have such a giant opportunity?

So here's to you people who decided my house was definitely the right one to break into!  You have now given me ample time and opportunity to do some things I have been meaning to but hadn't gotten around to.

I don't guess I will run away....

Peace & Quiet

Ahhh.....I love when the office is like this...no one is here but me and the phones are not ringing.  Just a little morning me time with my Pandora radio in the background!  Perfect for blogging!

I've had a lot on my mind lately.  Still fighting this endless battle to be a nicer person.  Also still trying to figure out when I got so incredibly mean and why.  I know, some of you are like, "mean?  she is nuts"  but others of you know...you have seen it....and I am not talking about people thinking I am mean because I am willing you tell you the truth...I am not going to stop being honest because you don't like what I say.   Sometimes the truth hurts and it is necessary.  I am talking about just being mean.  Period.  I am not sure completely how to put it in to words.  Anyway...I am getting much better and feeling more like my old self but I have a ways to go!!!

I have been doing GREAT with my exercise routine!  Especially this week jumping back into it post vaca.  Someone even noticed....apparently my legs are looking thinner and more muscly....I don't know if I can tell they thinner part but I will gladly take that compliment!   It is amazing to me how much better I feel as a whole person when I am working out regularly.  I wake up earlier and with energy.  I am happier (and you all know where I work so that is a big deal).  I have more energy though the whole day and tend to get so much more accomplished than I would if I hadn't worked out.  Seriously.  If you are feeling bad and depressed and blah...GO WORKOUT!   You will feel infinitely better and I bet your friends and family will notice your mood improvement.   Plus it's just good for you!  Get the most out of life friends!  It requires a little work but I bet you will find it's worth it!!!

Okay, well someone just walked in and interrupted my quiet...I guess I better get with it!

So....here is a short recap...If Katelyn has a glass in her hand she MUST cheers before life can go on...really funny!  Had amazing food at Bartolotta....seriously worth every penny you have to pay for it...EVERY single penny.

Food highlights from Bartolotta:

**cappesante dorate con porcini:  seared sea scallops with porcini mushrooms
penne con scorfano e melanzane: penne with Mediterranean scorpion fish, eggplant, tomato, basil
**ravioli di ricot ta con caciot ta Toscana: sheep’s milk ricotta ravioli, Tuscana pecorino cheese, Marsala with glaze
semifreddo di vaniglia Tahitiana, fichi secchi sciroppati al vino rosso, salsa di
cioccolato amaro

Ok so that is almost everything we ate...but that's just how good it was!!!!!!

The pool was awesome!   So relaxing, I finished almost 3 books while I was gone!  We went to one buffet for breakfast at the Paris...it was delicious.  We also went to Mon Ami Gabi at the Paris for a second breakfast...also delicious!  We saw Vegas' rendition of Phantom.  Most of the singing was great, the special effects were out of this world...but as a musical lover...I was less than impressed overall...they skipped scenes and that Phantom had this nasal quality that was well....annoying.

We also met our friend Nick Olivas, Bartolotta executive sous chef extraordinaire, and caught up on 8 years!  Well mostly caught up!  We had seen him at dinner, when he so wonderfully spoiled us, but he was working so we got together the next day to really chat!  I remember him being adorable, he was so funny and very sweet, I think that just multiplied with age!  Great man, that fellow!   Anywho!  We went to Emeril's Table 10 for dinner, the Caprese Salad was awesome....the Shrimp wrapped in pancetta...though they look AMAZING...were less than impressive!  How sad.  I expected more Emeril.....following dinner we wnt to Illy and got amazing Italian espresso drinks!  SOOO good...I will have some at my house always...yes I will!

So that's it friends!  Vegas, relaxing and full of food madness.....and Katelyn saying "Cheers!"

I'm BAAAAACK!!!!

...and as usual I have forgotten my camera.  Don't ask what my deal is because I really don't know.  Tomorrow I will have my camera in hand or I will go home and get it!

Vegas was AWESOME!   Pool, Food, pool, food...yeah that's about how it went!  Oh and I have some glorious pics!!!!  Tomorrow.

So for today since I ruined my own blogging experience as well as yours....here's the skinny...

Totally got the teaching job and calling HR this afternoon see when I get to sign contacts and be orientated and such!  I have a CRAZY weekend coming up which I am iffy about but we will see...Friday and Saturday promise to rock however.  Friday I have a wedding reception and Saturday I get to go cook!!  These are both things I can get behind and am anxiously awaiting!   It's Sunday that could be the problem...I might have to drive to TX...AGAIN!   Only this time further and for reasons that don't make my heart as happy as mini road trips with my cousins do!!!

If I go to TX this weekend it will be to hopefully stop in and see the parents house in Lubbock (WOOO!!!  MAMA!!!!!!!!  I miss my Mama!)  and then to head back to Dallas to pick up a dog.  Trey's aunt's schnauzer, Kuper, to be exact.   She is really sick and he and his brother, Kacey, may be too much for her together while she recoups...so naturally we get the naughty one....I will train him into submission....maybe I can get Cesar to come train him!  Haha!  Right.

Still don't have a clue if I have to do this or not....but I need to know SOOOON so my work doesn't have a heart attack!

Bling BLING!!!!!

So, over the weekend my brother proposed AND my cousin Skyler got proposed to!   WOOO!!!!  Here are the results, they are good:

That's pretty much the big news....I was a little sad that my bling isn't new anymore so I took a couple pics of it with the hubby's ring.... 


Awe!  just about 5 years later and it's STILL blinging!!!  hehe!


I have to be a little selfish....my brother was in my wedding and even though Claire has like 28 sisters (by 28 I really mean 3) I hope he wants me in his wedding!!!!  I sorta hope the same thing for my Skylie too.  Her wedding is going to be next September so I am sure I will be hearing all about it soon!  Jordan and Claire are a little slower with the date picking.....

Going to Vegas on Thursday with my Katelyn!  So excited!   I need a vacation and this week is looking like it could hold some pretty exciting news so I will be updating you on all of that soon!


God has been working on my patience and I think it is about to pay off!!!!!!!!  Thank you!!!!!!!!

FRIDAY!!!!!!!!!!!!

I find that as every day passes and I wait and wait for someone to love me and want to hire me to teach in the fall....I am growing more impatient and weary....I have told you all about my current job right?  Well in case you missed it...here are the highlights:

-There is Jon our "computer guy" (I use that term loosely as my husband, the ACTUAL computer guy, spends a lot of his time fixing what Jon breaks)....he looks and porn and cusses a lot....my ears hurt on a daily basis

-There is our creepy skeezy accountant who srambled his brain with alcohol and now even though he isn't drunk (good for him) he still acts drunk.....and he has no personal space....and no people skills....he is just...ew.

-There is our head technician who feels the need to tell me every time his mother's dog takes a crap and spreads his smoke smell ALLL over the office.

-There is Rick, another technician, he is an ex cop and super nice guy, I really have no gripe with him, HOWEVER the last girl who sat in my chair accused him of stalking and sexually harassing her...so....

-There is also my boss' father, he is 75 and grouchy and mean....I guess I would be too if I was 75 and I had to work with these morons...oh wait...

-Lastly, there is my boss who lets all the madness happen in his office...and then he wonders why those yahoos are the only people he can keep around....

....and that is just a nutshell....oh the stories I could tell...I will spare you, you would cry!

With all of this plus their shenanigans to deal with on a daily basis, I am just done.  I am trying to be patient I really am but it does get harder daily as the summer creeps by and I have to give them enough time to hire someone when I leave so I can train them....although if it doesn't happen they sorta deserve to be left high and dry.

I do have to say...my boss, though lacking any management skills and though he has an inability to control things, has been good to me.  He is kind and thoughtful and while I think he has terrible taste in people (he didn't find me his business partner did...his partner should do all the hiring...he has good taste, I used to work with him) he is in general an easy person to work for.

Okay, I am feeling much better about Friday now that I have typed all that! So, I know you are wondering....what is on the schedule for the weekend?

It goes like this...I have to clean my house and weed our garden before I get to do anything else.  I am going on vacation next week and the house will be enough of a wreck with the hubs home alone that if I don't clean I will cry when I get home.  Anywho...then there will be some lounging and book club!  Yea!!!!

Going to see the A-Team this afternoon.  Very excited!  Holler at you later!

A Beautiful Mess

On the way to work this morning I heard the new Amy Grant Song and I just want to share some lyrics:

I just love this song.  When I am driving to work and running late or I have had just a rotten day and I am a mess and I have done everything wrong I could possibly do in a day...I just stop and think, "Thank heavens God knows I am a wreck and still loves me!"

I have been doing a lot of reflecting as I prepare to journey down the road as a teacher...of teenagers no less...I want to be a good example for them because for some I may be the best example they ever have.  I might have said that in an earlier blog but it really does stick with me.  I am trying to be more kind and thoughtful...less gossipy.  I never used to be a big gossiper but I find that lately the mouth flapping has been a little over board.  I shouldn't be so mean....sometimes I wonder if I am being mean because I am upset with me and I want others to focus elsewhere....who knows.  I just know I am thankful that I can ask forgiveness for being a jerk everyday and everyday I am forgiven.

Just feeling a little reflective this morning friends of mine.  Reflection is good.  It cleans out your insides.  This is different than obsessing or whining...those things just make you feel worse.  Don't obsess friends or make excuses, accept your reality and trek onward.  You will feel much better!
In other less reflective news, I LOVE Jen Lancaster.  That's right Jen you make my workouts and other various activities hysterical!  I was on the elliptical yesterday with "Pretty in Plaid" (for the second time) and I just laughed and laughed...out loud....people at the gym now hate me...  Oh that awful food you had to eat...I had to eat it too...enough said!  Please keep writing books filled with such hilarity.  I have "My Fair Lazy" ready for my vacation next week...let me tell you how hard it has been to save it...I have had it since the day after it came out!!!!!!!!

Ladies, if you haven't read my friend Jen's (in my head we are great friends...she understands me!) books please stop what you are doing and go get "Bitter is the New BLack"  I guarantee laughter.  110%.

In other book news:  I am just about down with our book club book, "Sex Murder and a Double Latte" by the fabulous Kyra Davis.   I like it.  Funny, a little romance, a good mystery and lots of girl stuff...yes please!

Whoop!

  Bullet point blogging:

  • So I am excited (for myself) to report that after a week of eating terribly and doing practically no working out....I have not gained a lb back!  PHEW!!!!   That's my kind of a bad week!
  • The long weekend was great, I was exhausted at the end of it and I am ready for this weekend which will be filled with weeding the front garden and attempting to make it beautious...cause it sorta looks awful right now...
  • Princess Penelope and Nellie have been playing like crazy...although Nellie is grounded because she tore a hole in the lining under the couch (which I don't REALLY care about because the couch is older than me) and now Penni Pie can get into the couch where the springs are....I hope she doesn't accidentally get squished!
  • Made the mistake yesterday of commenting on someone's facebook and giving an opinion about marriage....then some moron who doesn't know me from Adam tried to start a commenting war...people are retarded (sorry, it's true and I in no way mean it in a mean way towards anyone with a disability...wow...teacher properness coming out there)...and I stand by my point which is that people play "married" and when they are bored or done trying they just bail because divorce is no big deal either....SHAME SHAME SHAME.   Don't get married if you don't understand what you are committing to and don't even let divorce be an option!!!!!!   Ok...putting the soapbox away....
  • Super excited, my interview with Tipton County schools is on Monday!  I hope it's a real interview and not a courtesy interview.  It would be an awful drive everyday but it would be fun if I got a job at Covington so I could be at school with my cousin for her Senior year!!!
Last but not least LUCA BERENGI MEREDITH joined the world last night at about 9pm and he weighed in right at a perfect 6 lbs!

Jiggle, Jiggle

So if you noticed yesterday I said how this morning was my FIRST spin class...if you are a faithful reader you will remember that I was supposed to start going oh....like....3 months ago!!!  Oops!  I did finally go this morning and let me just tell you....SWEAT ATTACK!   Wow, my legs are like jelly and I have been working out for months now...and not just elliptical work....but real workouts with weights and everything....apparently spin works muscles I have been missing. 

There was another lady in class who was tripping me out!  I believe she told me her name was Patricia but it was 5:30 in the morning and I tend to be delusional without coffee before I communicate!  She was talking to the instructor and singing and  hollering in pain through the entire class.  She was actually a relief, she made it much easier to be there and she was very encouraging...I totally had to give in a few times and she would say, "Girl, it's your first time!  Pace yourself, you're doing better than I did in my first month!"  Ha!  Yeah right!

The class was only 45 minutes (THANK YOU LORD!!!!) so I got to get a little breakfast this morning on my way to work (which I was still 45 minutes early for).  Get ready for it because, my friends, you need to try it.....I have tried many a breakfast sandwhich, Starbucks has them, Mcy D's has them, heck, Subway even has them now (but yikes I don't think I could handle Subway store smell in the morning) but this glorious morning I stopped at Dunkin' Donuts.....

I know, you're thinking...you stopped where?  And you got what?   That's right, Dunkin' Donuts and I got a breakfast sandwich...an egg white, ham and cheese english muffin to be exact...they have EGG WHITES if you want!!!!!  That was the first plus, then they handed me this freshly TOASTED sandwich with CRISPY ham and melty cheese....BEST.  BREAKFAST SANDWICH. EVER!!!!!!!!!!!!!!!!  I do not tell a lie...I am not sure I ever want to eat anyone else's breakfast sandwiches again....  I got coffee too, I am not sure it is as good as they say ("they" say it's better than Starbucks...but I guess you really need to be a coffee connoisseur to really be a fan of plain Starbucks coffee) but it was pretty tastey...although I am an addict so it might have been just a fix by the time I got it!  Ha!

I have a lot of new reading going on, what with having to write 2-3 articles a week for the Memphis Examiner.  Sort of excited and curious about my newest book:  Doesn't She Look Natural by Angela Hunt. (http://www.angelahuntbooks.com/html/contemporary.html) I only read a small review but it's about a lady who inherits a funeral home and moves to the south to run it and such.  Christian Fiction of course!

Still working on Sex, Murder and A Double Latte and gods in Alabama. Will fill you in when I am done!

Who decided I need to title these things?

Yes that is me whining because I am unable to come up with a brilliant title for the blog today!  I almost titled it "Thursday" I am lacking so much creativity today....maybe its the impending full moon and lack of Sex and the City 2 seeing this evening....hmmmmm...anywho...

My toe is finally better (I didn't tell you about the accident because its too gross for my wonderful little blog...no really...let's just say it hurt...a lot!) so its back to Jazzercise today.  I have missed it.  Starting my Spin class at....5:30 AM tomorrow....I have to do it though I need to drop some l's & b's STAT!  Vegas is 2.5 weeks away and I would like to at least sort of want to be seen in public by the pool!

So this trip to Vegas is with my sweet friend Katelyn who has been my friend since we were 11.  Since my parents decided to move to Texas (blagh...sorry Texas, it's not your fault) I won't be going to Colorado to visit for the summer and see Katelyn...this simply will not do...so Viva Las Vegas!   It should be SO much fun barring any Katelyn shenanigans...she sometimes likes to pull those.   I plan on a lot of pool and sun and then fabulous dresses and evenings out!  Which also reminds me I better work on the tan because my arms and face are three shades darker than my legs....that is just unacceptable!

Have a fun weekend of eating El Torro Loco (yes, the Crazy Bull), possibly some SATC2 (which I need to see stat or I just feel I am not a true fan...and well my girls and I are fabulous so that will not do!), a day laying by a pool (yes please and thank you) and maybe somewhere in there some chores and a little more Mexican food (because let's be honest...I am an addict).

Itty Bitty Kitty...and some other stuff

Ok so she is on Facebook already but I have to put her on my blog too...So we didn't go with Daphne, the husband wasn't into it...even though she is MY kitten!  So we had a lot on the table...Sasha, Mia, Thia, Phoebe, Penelope (Penny for short)...I was all for calling her Kitten at one point!  Nothing was sticking.  The husband wanted Sasha and while I liked it I just couldn't get it to roll off my tongue like I wanted....So I just sorta through Phoebe on her and since then she has been my little Phoebs or sometimes Fifi!  I like it, she has a lot of color and personality she needed a name to match it...still feeling ISH about it....hopefully she will not get another name, I don't want her to be traumatized!

So without further interruption:

                                         They got me dirty in that water...must. clean. off.

                                                     She has a freckle...what a star!
                                            Pretty sure she is settling in just fine....


In other weekend news:  My wonderful husband decided he needed to cool off in Nellie's puppy pool:

















And the Nellio...well....this was her weekend:

Look at that sweet puppy face...she was exhausted from sniffing the kitten!!!!  This dog is just the coolest!  I could kiss her puppy face all day long and smoosh it too!!!

Recipe time...well almost...I will have to post the ACTUAL recipe tomorrow BUT  my mother in law found and proceeded to make the BEST Tiramisu!   It's simple and it will look like you did a lot of work when you didn't!   Love those recipes!


AI finale tonight...FINALLY!!!!   I think I am leaning towards Mamasox but Lee could take it!  Gonna have some Shrimp Scampi and some QT with the First Lady!

Ha...this just in....my hubby just sent this to me...puppy play time IS oh so tiring...
